White Choc Chip Muffins

These are fairly simple and taste GREAT!!

  • 150g Butter
  • 150g Sugar (approx 3/4 cup)
  • 2 Eggs
  • 3/4 Cup Coconut Milk
  • 2 Cups Self Raising Flour
  • 60g Shredded Coconut (approx 3/4 Cup)
  • 1 Pack white choc bits, I use a 250g pkt of Nestle

Beat butter and sugar, add eggs then add rest of ingredients. Mix and cook on about 180-200C.

NB – Don’t over beat & make sure to use papers as chocolate sticks to the pan!

Also these puppies only take about 12-15mins to cook, so keep an eye on them!

    I forgot to tell Chris this, but you may need to add a little more coconut milk to ensure they aren’t too dry…this is especially so if you need to use coconut cream for some reason!!!

    DELISH! Thank you for sharing this.

    I changed it a tad as I didn’t have coconut milk, so I just used regular milk … and I didn’t have quite enough white choc .. so I added a handful of mini marshmallows!Oh, and I used mini muffin papers … there are MILLIONS of them! LOL – 5 dozon so far, and still counting

    Try adding some raspberries to the mix…oh so yummy!!! Did it this morning!!!!
